1/3 cup shortening (may substitute with butter)
1/2 cup sugar
2   eggs
1 3/4 cup flour
1 tsp baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup mashed bananas
1/2 cup chopped walnuts (optional)
  1. Pre-heat the oven to 350⁰F (177⁰C)
  2. Mix shortening and sugar, then add eggs
  3. Sift all of the dry ingredients in separate bowl
  4. Mix all, then add bananas and nuts
  5. Grease well 9″x5″x3″ glass pan (batter will rise)
  6. Pour batter into pan
  7. Cook for approx. 45-50 min (or until center is completely cooked)
  8. Remove from pan and cool on racks
  9. Wrap and store.
